To transform the agricultural products in alimentary conserves is a tradition begun from the founder Antonio Anfossi that in the first years of the century he had already understood which one was the way for a modern agriculture We want continue in this purpose, brought again the old Ligurian recipes and create some new of it, always paying attention not to betray the spirit of our activity. Our premises used as place for wagons and the stables for horses have been restructured in 1985 and get suitable ones to accommodate the systems for the transformation of the agricultural products. On a surface of 200 mq. divide in two unit, unit production and unit packing, in a controlled temperature and atmosphere, is arranged the modern equipments for the preparation of our specialties.

These semi finished are destined to the alimentary industry, to the handicraft gastronomy, the restaurants as base for the preparation of flavouring and fillings. Our requirements for the preparation of pesto and the other creams it only demands semi finished in extra virgin olive oil, but in order to satisfy the requirements of our customers we produce also olive oil and sunflower seed oil. The product is sold in plastic bucket from 30 kg to refundable stainless steel tank of 1000 kg, manufactured in controlled atmosphere. None of our products contains conserving.

For the production of the semi finished we use what it is cultivated in our fields and collected few hours before. From the sowing until the conservation of the semi finished in the refrigerator cells and then during the preparation and the packing of our specialties, the quality of the system is guaranteed from the constant control from part of our specialist staff. |

The use of specific machines for the collection of leaf vegetables, the transport in suitable plastic containers (bins), the washing and the carefully drying, are fundamental in order to catch up the standards of alimentary hygiene that our customers demand. To being able to guarantee a constant product in its characteristics, they have been installed computer science systems of monitoring of the washing water, of the weight of the component and the temperatures of the atmospheres that is in the working space, in the refrigerator cells and the process of pastorize. The conservation of the product is assured due to the use of nitrogen with a "stripping" application during the phase of filling of the containers. This technique reduces lessened the oxidation of the product, succeeding to catch up the percentages of 0.2 parts of Oxygen. The transport is carried out from others with cooled means of transport, and is advised the conservation to the temperature of 5 °C. All the process is regulated from the application of the handbook of self-control (HACCP) while the test of the products quality is entrusted to external laboratories of qualified analyses.

To the term of the alimentary sour row of Azienda Agraria Anfossi becomes part of it the society of transformation of the semi finished in to ligurian alimentary specialties. Created in 1998 the production of pesto, pâté, cream of etc, etc,etc. has continued introducing some interesting new developments in the range: it is destined to distributors, wholesalers, retailers, great distribution revolts to a demanding consumer, able to identify in our specialties the genuine flavour of the ligurian tradition. Our products in fact are prepared choosing the best ingredients, mixing it with care, in extra virgin olive oil, without using conserving or colouring. We select the harvest in the fields and in the production premises we follow a handicraft preparation that maintains the genuine fragrance intact. The production is carried out mostly in the same building where the other alimentary productions, the label process and the packaging are made. All the production of Orto di Liguria does not contain genetically modified food. The materials employed for the packaging are completely recyclable. The Shelf medium Life is of 15 months from the production date. |
