THE WINE CELLAR

Il Paraxo

In the Azienda Agraria Anfossi wine cellars, to the ground floor of the Paraxo, in the coolness of the thick walls and the old ceiling , using new technologies, we produce wine with grapes of our fields since long time. 

We must return behind in the years 1931 in order of travelling over again the history of the Anfossi wines, when Antonio decided to transform the clusters matured in the sun of the Coast, in the noblest wines of the region: the Pigato, the Vermentino, the Rossese

With the qualitative factors such as particular microclimate, the kind of land, the vineyards and the patrimony of experience matured in 70 years spent in the vines and the wine cellar, we express it in one excellent production.

The yield for hectare is regulated thinning out the clusters during the summer, in order to improve those that remain and in the winter, with one strict pruning, to all advantage of the quality of wines.

Le vasche di fermentazione

In September we do the last hard work of the season. It could not be other that manual, in plastic containers in small dimension in order not to damage the product. 

When the grapes arrive in the wine cellar pass of delivery from Paolo to Mario, responsible of the wine. 

Here the grapes is press, only the red ones diraspate, and transferring in the tanks, the white one introduced in the pneumatic press for one soft squeezing.

A particular attention is dedicated to the Cru's wine-making "Le Caminate", obtained with the grapes Pigato with the same name of the property, on red earth hills to Campochiesa di Albenga. 

This wine, in fact, is fermented only partially in.white, remaining short time to contact with the peels in order to extract the aromatic substances on which the complexity of the bouquet will depend. 

It follows the svinatura, that is the separation of vinacce from the flower wine that to the inside of the steel tank will continue to refine with the secondary fermentations and pouring it off.

During the spring the first casks of Pigato and Vermentino will be ready to the imbottigliamento and the sale; for the Rossese and the Cru we will have to wait after the warmth of the summer for taste the full load of flavours. 

Altogether the production is approximately 80,000 wine bottles to Denominazione guaranteed origin from West Liguria Coast.
